salted caramel lava cookies

MAKES 16 

150G SALTED BUTTER

160G SOFT LIGHT BROWN SUGAR 

1 EGG

1 1/2 TSP VANILLA EXTRACT 

260G PLAIN FLOUR

1 1/2 TSP BAKING POWDER

100G CHOCOLATE CHIPS 

100G MACADAMIA CHIPS, ROUGHLY CHOPPED 

16 SOFT TOFFEES 

PINCH SEA SALT FLAKES  

1. Preheat oven to 190°c and line two large baking trays with baking paper

2. Put the butter in a large mixing bowl and beat until smooth. Add sugar and beat for a further 3 mins

3. Stir in the egg and vanilla extract then add the flour and baking powder, gradually combine to form a soft dough then add the chocolate cips and macadamia nuts

4. Scatter the toffees with the sea salt and press them on the surface so they stick

5. Divide the dough into 16 equal pieces and shape into ball shapes, with a toffee enclosed in each. Flatten a little then space the cookies out on the trays, allowing room for them to spread

6. Bake for 16-18 mins, leave to cool a little but they are best serves slightly warm! You can also scatter with a little more sea salt if you'd like
