CARROT AND SWEET POTATO SOUP

SERVES 4

30G BUTTER

450G ONIONS, CHOPPED

450G SWEET POTATO, PEELED AND CUBED

450G CARROTS, PEELED AND CHOPPED

1TBSP GROUND CUMIN

1L VEGETABLE STOCK

120ML SINGLE CREAM

SALT AND PEPPER



Melt the butter in a soup pot, adding the onions in when the butter has melted. sauté the onions for 2 minutes.

​Add the sweet potatoes and carrots. cook for another 2 minutes then add the cumin. stir well and cook for a further  minutes.

​Add the stock and bring to a simmer. cook on a medium heat for around 30 mins, until the sweet potato is tender.

​To purée the soup, blend it in batches until smooth.

​Return to a low heat and add the cream. stir well, adding salt and pepper to your liking.
