BUTTERNUT SQUASH MEDALLIONS W/ COURGETTE, ROASTED TOMATOES AND MOZZARELLA

1 BUTTERNUT SQUASH

2 COURGETTES

1 TIN OF ROASTED TOMATOES

HANDFUL OF FRESH TOMATOES

PACK OF MOZZARELLA 

DRIED HERBS

Pre-heat the over to 200°c

Cut your butternut squash into 9 pieces and pop into the oven

While that's cooking, put your tomatoes on the hob, adding the fresh ones and some mixed herbs. Simmer over a medium heat.

After the butternut squash has started to soften, add the courgettes (making sure to put a little oil and seasoning them) 

Remove from oven when veggies are cooked 

Add the mozzarella and present the dish on the plate!
